Tim Horton’s muffin recipes are available online at Food.com. To make oatmeal muffins, preheat an oven to 425 degrees Fahrenheit. Grease a muffin tin, or line it with muffin liners. In a bowl, combine 1 cup of milk and 1 cup of oats, and soak 15 minutes.
In another bowl, beat one egg and 1/4 cup vegetable oil, and stir in the oatmeal mixture. In a third bowl, sift 1 cup flour, 1/4 cup sugar, 2 teaspoons baking powder and 1/2 teaspoon salt. Combine all, and spoon into muffin cups until 2/3 full. Bake in a preheated oven 20 to 25 minutes or until a toothpick inserted in the middle comes out clean.
To make Tim Horton’s lemon cranberry muffins, preheat an oven to 350 degrees Fahrenheit. Mix together 3 cups of oats, 3/4 cup of flour, 4 teaspoons baking powder, 1/2 teaspoon salt and 1 cup chopped cranberries. Use a second bowl to mix 1 cup of low-fat plain yogurt, 1/2 cup oil, 1/2 cup brown sugar, Egg Beaters for 2 eggs, 2 teaspoons lemon peel, 1 teaspoon cinnamon and 1/2 teaspoon vanilla.
Fold all the ingredients into one bowl, and spoon into muffin tins. Bake at 350 degrees Fahrenheit for 35 minutes, and cool.
