Tofu, bananas, applesauce or a commercial egg replacer can be used in place of an egg in a recipe for brownies. Commercial egg replacers are available in most well-stocked grocery stores and health food stores.
A half of a banana smashed up is equal to an egg in a baked good recipe and leaves the dish with a slightly sweeter taste. It takes 1/4 cup of applesauce to equal an egg. With either the applesauce or banana, a bit of baking powder can be added to make the brownies fluffier. To use tofu as an egg substitute, the baker should blend 1/4 cup of tofu with the liquid ingredients in the brownie recipe.
