Make a quick shrimp salad by adding 1 pound of extra small cooked or salad shrimp in a large bowl with 1 cup of chopped celery, 2 tablespoons of chopped onion, 2 tablespoons of minced dill pickle, 1/4 teaspoon of black pepper and 1/8 teaspoon of cayenne pepper. Mix in 1 tablespoon of lemon juice, 1/2 cup of mayonnaise and 1/2 cup of bread crumbs.
Another type of shrimp salad is a Cobb salad that combines shrimp and bacon on a bed of romaine lettuce. Cook 4 slices of bacon in a pan until crisp, then remove and add 1 pound of peeled and deveined shrimp. Sprinkle the shrimp with 1/2 teaspoon of paprika, 1/4 teaspoon of black pepper and 1/8 teaspoon of salt, then cook for a few minutes on each side.
In a bowl, whisk together 1/8 teaspoon of salt, 1 1/2 tablespoons of extra-virgin olive oil, 2 1/2 tablespoons of lemon juice and 1/2 teaspoon of Dijon mustard. Drizzle the dressing over 1 10-ounce package of romaine salad, 1 cup of shredded carrots, 2 cups of quartered cherry tomatoes and 1 cup of corn kernels. Toss the salad with the shrimp and bacon, then top with 1 avocado cut into wedges.
