To make Paula Deen's salmon salad recipe, gather 2 cups of cooked salmon, 2 crushed hard boiled eggs, 1 diced bell pepper, 1/2 cup of chopped onion, and the juice from 1/2 of a lemon. The recipe also calls for 1 diced cucumber, 4 or 5 tablespoons of mayonnaise, salt and pepper.
To prepare, mix the salmon and hard boiled eggs in a bowl. In a separate bowl, combine the onion, pepper, cucumber and mayonnaise. Pour the vegetable mixture over the salmon, add the lemon juice, and toss lightly. This salad can be served on a sandwich or over lettuce
