To make Paula Deen's Southern fried chicken, mix 1 cup salt, 1/4 cup black pepper and 1/4 cup garlic powder to make a house seasoning. In a separate bowl, beat 3 eggs with 1/3 cup water. Add hot sauce until the egg mixture becomes bright orange. In another bowl mix together 2 cups self-rising flour and 1 teaspoon pepper. Season 1 to 2 1/2 pounds of chicken with the house seasoning, dip it in the egg, and then coat it with the flour. Fry the chicken in oil at 350 degrees Fahrenheit until it is brown and crisp.
