One sauce that is appropriate for roasted pork tenderloin is made from parsley, shallots, Dijon mustard, lemon juice and extra-virgin olive oil. The cook purees 1 1/2 cups of parsley and 2 tablespoons of shallot with 2 tablespoons of extra-virgin olive oil and water, 3 tablespoons of Dijon mustard, and 2 teaspoons of lemon juice in a blender. She then adds salt and black pepper to taste.
The Food Network gives another sauce recipe for pork tenderloin that contains Dijon mustard. This time the cook prepares the sauce in a skillet over medium-low heat. She combines 3 tablespoons of honey, 1/4 cup of water and 1/3 cup of Dijon mustard in the skillet, stirring until the ingredients are combined. The sauce needs to simmer for two minutes before it can be removed from the stove and spooned onto the pork.
Food & Wine provides a recipe for rosemary balsamic and orange sauce. The cook adds 1 tablespoon of extra-virgin olive oil to a skillet and places the stove temperature at medium heat. The pork is added to the skillet for four minutes, after which time 1 cup of fresh orange juice, 1/2 cup of chicken stop and 1/2 cup of dry white wine is added to the pork juices. One rosemary, parsley and oregano sprig are stirred into the skillet with five black peppercorns. The cook then places the entire skillet in the oven to finish cooking the pork.
