Some of Venable's recipes include steak topped with Gorgonzola butter, piña colada muffins, and a range of soups and salads. To make an easy Gorgonzola butter, mix together 8 tablespoons of unsalted butter and 2 tablespoons of cream cheese softened to room temperature. Add 2 tablespoons of crumbled Gorgonzola cheese, 1 minced garlic clove and 2 tablespoons of chopped fresh basil. Wrap the mixture in plastic wrap, roll into a log and refrigerate. Cut the chilled butter into round slices, and serve on top of toasted bread or grilled meat.
