- 3/4 cup all-purpose flour
- 2 tablespoons yellow cornmeal
- 1 tablespoon, sugar
- 1-1/2 teaspoons, baking powder
- 1/2 teaspoon salt
- 1/2 cup whole milk
- 1 large egg
- 2 cups yellow corn kernels
- Desired oil, such as vegetable, olive or coconut
- Desired condiment
Step 1Use a large knife to cut corn kernels off two cobs, collecting the kernels and juices in a large bowl.
Step 2Combine the dry ingredients in a large bowl, including the flour, cornmeal, sugar, baking powder and salt. Stir the milk and egg into the dry ingredients to create the batter. Then fold the corn kernels into the batter.
Step 3Using a heavy-bottom pot or Dutch oven, heat 4 inches of vegetable oil over high heat until it reaches 365 to 375 degrees Fahrenheit.
Step 4Scoop spoonfuls of the batter into the oil. Cook the batter for 1 to 2 minutes until it reaches a golden brown, turning occasionally.
Step 5Once cooked through, transfer to a paper towel-lined plate. Sprinkle with salt and serve with the desired condiment.
