Recipe websites such as Food.com and Cooks.com feature caramel icing recipes. Celebrity chef Paula Deen has also published her own recipe for this frosting. The preparation and cooking time for caramel icing generally is 15 minutes or less, depending on the recipe.
To complete Paula Deen's recipe, melt 1/2 cup butter in a saucepan, and add 1 cup packed brown sugar and 1/3 cup heavy cream. Cook over medium-low heat for approximately two minutes, dissolving the sugar. Take the saucepan off the stove, and add 1 tablespoon vanilla extract. Move the mixture to a large bowl, and beat 16 ounces of confectioner's sugar into the mixture until the consistency is smooth. Add heavy cream as necessary if the icing is too thick. Top with finely chopped walnuts as a garnish if desired.
