Under the Italian category are a variety of recipes from pasta salads and lasagna to Italian desserts. To make Summer Pasta Salad, cook 8 ounces of dried lasagna noodles or 3 cups of penne pasta according to package instructions. While the cooked pasta drains, combine 2 tablespoons of olive oil, 1 tablespoon of lemon juice, 1 teaspoon of salt and 1 minced garlic clove in a bowl. Drizzle the dressing over the pasta and toss until the noodles are well-coated.
While the pasta chills, cook 1 1/2 cups of fresh green beans in boiling water for five minutes, and then combine them with 1 1/2 cups of thinly sliced zucchini, 1 cup of arugula or baby spinach, 1/2 cup of thinly sliced red or green onions, 1 cup of halved cherry or grape tomatoes and 1/2 cup of halved pitted kalamata olives. Mix in 8 ounces of cubed fresh mozzarella cheese, 2 ounces of thinly sliced and torn prosciutoo or salami, 2 tablespoons of slivered fresh basil and red wine vinaigrette to taste.
