Campbell's Kitchen features an easy recipe for apple stuffing that combines sweet and savory flavors using dried cranberries and fresh apples. Cook 2 cups sliced celery and 1 cup chopped onion in 3 tablespoons butter in a 3-quart saucepan until tender. Stir in 2 and 1/4 cups chicken broth, adding in 1 chopped Granny Smith apple and 1 cup sweetened dried cranberries. Remove pan from heat and lightly mix in 1 package of herb stuffing mix. Transfer to a baking pan lined with aluminum foil and bake for 35 minutes at 350 degrees F.
To make Rachel Ray's apple stuffing, melt 6 tablespoons butter until it foams and add in 2 cups chopped celery, 1 large chopped onion, 2 unpeeled chopped large crisp apples and 2 large fresh bay leaves. Season mixture with 1/2 cup finely chopped fresh herbs and add salt and pepper to taste. Stir in 1 bag stuffing mix and cook for 10 to 12 minutes.
Grease a casserole dish using 1/2 tablespoon butter and fill with the stuffing mixture. Dot with the remaining butter and bake for 30 to 40 minutes at 375 degrees F.
