A recipe for Jamie Oliver's beef bourguignon is available on the chef's website, JamieOliver.com. The recipe includes diced blade of beef, shallots, bacon, a carrot and garlic among other ingredients.
To make the beef bourguignon, preheat the oven to 300 degrees Fahrenheit and heat a large casserole pan on medium heat, adding 4 tablespoons of canola or rapeseed oil to it. Season the beef with salt and pepper, and fry it for about 3 minutes. Flip it and fry it on the other side for the same amount of time.
In the casserole, combine the shallots, bacon, carrot, mushrooms, garlic and chopped thyme, and cook until slightly browned. Next, add in the tomato puree and flour and cook for an additional two minutes, stirring the whole time.
Add the beef to the pan along with the juice from cooking, then pour the burgundy and stock over the beef. Add the parsley, bay leaves and orange zest to the mixture. Place the casserole lid on top, and cook for about two and a half to three hours. Adjust the seasoning to make sure it is to your liking. Serve this dish as it is traditionally served in France with potatoes boulang�re.
