RealSimple.com and FoodNetwork.com both offer quick dinner recipes, and many of them serve four people. RealSimple provides a selection of meals that take 15 minutes or less to prepare, while the Food Network sets the bar at a total of 30 minutes or less.
To make the Food Network's pappardelle with snap peas, boil 1/2 pound of pappardelle pasta in salted water for about 6 minutes, then drain the pot and reserve 2/3 cup of the pasta water. While the pasta cooks, heat 1 tablespoon of butter and 1 tablespoon of olive oil in a pan over medium-high heat. Add 1 bunch of scallions cut into 1/2 inch pieces, 1/2 pound of chopped sugar snap peas, 1 seeded and minced jalapeno pepper, and 1/4 teaspoon of salt. Cook this for about 4 minutes, then move it to a serving bowl, and toss it with 1 cup of chopped fresh parsley and 1 bunch of chopped chives. Toss the pasta with the vegetables.
Put the reserved water in the skillet with 2 tablespoons of butter, and boil the mixture until the butter melts and the sauce reduces slightly, or about 2 minutes. Pour the sauce over the pasta and vegetables, and mix in 1/2 cup of crumbled ricotta salata cheese. Sprinkle more cheese over the top before serving.
