Lutefisk is a traditional Nordic dish made from fish, usually dried and salted whitefish, and lye. It has a gelatinous texture and very mild taste. It is mainly consumed in Norway, Sweden and Finland, traditionally near Christmas time. It is also popular in parts of the United States that feature strong Scandinavian communities, such as Madison, Minnesota, which named itself the Lutefisk Capital of the World.
