Knorr.com provides a recipe for pasta fagioli in a slow cooker. The cook begins by preparing bacon, carrots, garlic, onion and celery in a skillet, then transfers the contents of the skillet to a slow cooker and combines them with the remaining ingredients.
Cook 6 slices of chopped bacon in a skillet until crisp. Remove the bacon and reserve 2 tablespoons of drippings. In the reserved bacon drippings, cook 1 chopped onion, 2 stalks of chopped celery and 2 chopped carrots until golden brown. Add 1 clove of garlic to the skillet and cook for 30 seconds. Add contents of the skillet to the slow cooker.
Using a fork, mash 1/2 cup of canned cannellini beans and add them to the slow cooker with the remaining beans, 1 can diced tomatoes, 3 chicken bouillon cubes, half of the bacon and 4 cups water. Cook on low for eight to 10 hours or on high for four to six hours. Add 3/4 cup ditalini pasta 30 minutes prior to serving. Garnish with remaining bacon.
