There are a few different approaches to making brown gravy from scratch as some recipes use the pan drippings of roasted meat for flavor while others use stock or bullion. For example, one recipe for brown gravy calls for 2 tablespoons of pan drippings that are then thickened with flour and finally thinned into a sauce-like consistency with water or milk.

In addition to getting flavor from bullion, stock or pan drippings, brown gravies can be seasoned with additional ingredients, such as oregano, salt, black pepper and other spices or herbs. In most cases, brown gravy is built up from a flavorful base that is thickened and then thinned to a saucy consistency with wine, water or milk.
