Although sold commercially, homemade marshmallow cream is fairly easy to make. It only requires a few ingredients and is ready in about 30 minutes, when following the steps below...
- 1/2 teaspoon cream of tartar
- 3 large egg whites
- 3/4 cup light corn syrup or honey
- 3/4 cup granulated sugar
- 1/3 cup water
- 1 teaspoon vanilla extract
Making the Marshmallow Cream:
- Mix the cream of tartar and egg whites
- Mix the remaining ingredients
- Combine the egg and syrup mixtures
Add cream of tartar and egg whites to a mixing bowl. Use an electric mixer to whisk the mixture. Add 2/3 teaspoons of sugar and whisk until soft peaks form. Set aside.
Add corn syrup or honey, water and remaining sugar to a small saucepan. Mix well and cook on medium-high heat until the mixture boils. Stir occasionally and cook until mixture reaches between 242 and 248 degrees Fahrenheit measured on a candy thermometer. Remove from heat.
Turn the mixer on low and slowly add the hot syrup to the egg white mixture. Increase speed to high and mix for 5 minutes. Add vanilla and mix for another minute until the mixture resembles marshmallow cream.
