To make your own easy Eat More bars, begin by placing 1 1/4 cups small-flake oats into a blender or food processor and processing until flakes are small, but not pulverized. Chop 2 cups dry roasted peanuts. Lightly spray or oil a 10-by-6-inch brownie pan. Over medium heat, blend 1/2 cup smooth peanut butter and 1 cup corn syrup in a saucepan; bring to a low boil, and stir well. Remove from heat.
Add 1 3/4 cups semisweet chocolate chips; stir until thoroughly combined and melted. Pour in oats and chopped peanuts. Stir until all ingredients are combined. Drizzle into prepared pan. Chill until hardened, and then slice into bars. This recipe yields 20 bars.
For a flavor with extra sweetness, melt 1/2 cup peanut butter and 3/4 cups honey over medium low heat. Stir in 1 cup chocolate chips until melted. Remove from heat. Pour in 1 teaspoon vanilla, 1 1/2 cups oatmeal and 1 cup chopped peanuts.
