With hummus, you can make hummus-beef burgers, hummus-sesame noodles, Mediterranean chicken salad cups and flatbread pizza with Greek salad. To make the flat bread pizza, bake 4 pitas brushed with olive oil for five minutes at 400 degrees Fahrenheit, and then layer them with 2 tablespoons of hummus along with 1/2 chopped cucumber, 1/2 chopped tomato, 1/4 cup of chopped kalamata olives, 1/4 diced red onion and 1 cup of baby arugula drizzled with lemon juice and olive oil.
To make hummus-beef burgers, sauté 1/2 diced red onion in olive oil, and then combine the onions with 1 pound of ground beef, 1/2 cup of hummus and 2 tablespoons of diced parsley. Form the meat mixture into patties, and grill them until cooked. Place the burgers in a brioche bun slathered with hummus and topped with tomatoes and lettuce.
Make hummus-sesame noodles by whisking together 1/4 cup of hummus, 1/4 cup of chicken broth, 2 tablespoons of soy sauce and 2 tablespoons of rice vinegar in a bowl. Drizzle the sauce along with 1 tablespoon of sesame oil and toasted sesame seeds over 6 cups of cooked spaghetti, and garnish the dish with thinly sliced green onions.
Make chicken salad without mayo by combining Greek yogurt, hummus and lemon juice with feta cheese, chopped tomato, sliced olives, minced shallots and rotisserie chicken. Spoon the mixture onto lettuce leaves, and top it with freshly chopped parsley and dill.
