When using a dough mixer, the yeast must first be proofed before adding all ingredients into the mechanical mixer. These ingredients should mix for 7 to 10 minutes, then placed in a buttered pan to rise for 20 minutes. The bread then bakes at 350 degrees for 30 minutes.
Two cups of warm water should be added to 2/3 cup of sugar and 1 1/2 tablespoon of bread yeast. This mixture should sit until it becomes frothy, at which point it should be added to the kneading bowl. In addition to this mixture, 1 teaspoon of salt, 1/4 cup of olive oil and 5 cups of flour are added to the bowl. Two tablespoons of wheat germ can be added to the bowl for flavor if desired. The mechanical kneader should run for at least seven minutes, after which the dough should be transferred to a buttered bread pan.
The dough in the pan should sit for at least 20 minutes to rise before being placed in the oven. While the dough rises, preheat the oven to 350 degrees. Once the dough rises, the dough should bake for 30 minutes or until the top of the loaf browns. Butter may be lathered on the top of the loaf as it bakes for added flavor.
