Many variations of cheese ball recipes include pimento cheese. Known as "the caviar of the south," pimento cheese is traditionally cheese, pimentos, salt, pepper and mayonnaise combined to create a paste.
The basic recipe uses either processed or sharp cheddar cheese, but substitutions such as Monterey Jack and cream cheese are acceptable. When making a cheese ball, there are several flavors that can be combined into the pimento spread, such as onions, paprika, Worcestershire sauce, cream cheese and garlic. Additional options include lemon, Louisiana-style hot sauce, cayenne pepper, green pepper, paprika, jalapeños and dill pickles. The pimento paste itself can be either smooth or chunky to add a different texture to the ball.
