The recipe requires 4 tablespoons of butter, 4 boneless and skinless chicken breasts, 4 finely chopped shallots, 1/2 pound sliced mushroom, 1/4 cup of dry marsala, 1/2 cup heavy cream and 1 teaspoon of lemon juice.
Pound the chicken breasts using a meat tenderiser to even out the thickness. Place 2 tablespoons of butter in a large skillet on a medium heat. Salt the breasts, and sauté them in the skillet for about two minutes per side, or until lightly browned. Take the pan off the heat, and set aside.
Melt the remaining butter in the pan, and add shallots and mushrooms. Cook until the mushrooms are lightly browned. Add marsala, and bring to a boil while scraping browned bits from the bottom of the pan. Add the cream and lemon juice and return to a boil. Season with salt and pepper. Return the chicken to the pan for about three minutes to reheat. Serve the dish with buttered fettuccine.
