To make healthy oatmeal cookies, combine 1/2 cup whole-wheat flour, 1/2 cup all-purpose flour and 1 teaspoon baking powder. Whisk together 1/3 cup vegetable oil, 2/3 cup dark-brown sugar, an egg and 1 teaspoon vanilla. Add the dry ingredients to the sugar mixture, then stir in 1/2 cup rolled oats and 1/2 cup dried currants or raisins. Roll the dough into balls, and place the balls on a cookie sheet. Bake for 15 to 17 minutes at 350 degrees Fahrenheit.
