Before freezing potatoes, they need to be scrubbed thoroughly and blanched. Blanching potatoes helps stop enzyme reactions, which can cause loss of flavor and overall quality. Blanch small potatoes for about 6 minutes and larger potatoes for about 15 minutes. Remove the potatoes from the boiling water and allow them to cool completely before storing them in freezer bags. Potatoes can be frozen for up to 12 months.
