Freezing is a viable option for storing fresh mussels. After rinsing, place the mussels in an airtight container or in freezer bags with the mussel liquid. Frozen mussels stay fresh for three months.
Thaw frozen mussels for 24 hours in the refrigerator before enjoying or cooking. Never thaw at room temperature to avoid possible illness. Also, do not refreeze any mussels that have been thawed.
Generally, the meat from frozen mussels is softer than fresh meat, and these mussels are best cooked rather than eaten raw. Once the meat is thawed, boil the mussels in a small pot for up to five minutes after the shells open.
