To make fish sinigang, a sour broth dish made with tilapia, combine 1/2 pound of tilapia fillets, 1 chopped head of bok choy, 2 cut medium tomatoes and 1 sliced daikon radish in a pot with 3 cups of water, 1/4 cup of tamarind paste and 2 dried red chili peppers. Bring the water to a boil, and cook everything for five minutes. If you're using frozen fish, cook it for 10 minutes. Serve the dish in bowls.
To make tinolang manok or chicken ginger stew, saute 5 minced garlic cloves, 1 diced red onion and 2 tablespoons of crushed ginger in 4 tablespoons of oil until the onion turns tender, and then add 1 quart of water and 1 whole diced chicken to the pot. Bring the water to a boil, and then reduce the temperature to a simmer for 20 minutes. Add 2 tablespoons of fish sauce and 1 diced papaya to the mixture, and cook for another five minutes. Stir in 1/2 cup of chili leaves, and remove the pot from the heat. Serve the stew over rice.
