Epicurious.com has an easy recipe for beet and feta cheese salad. In addition to canned beets, you will also need feta cheese, baby salad greens, lemon juice, olive oil, salt and pepper.
To make the beet and feta cheese salad, drain four small, whole beets and quarter them on a plate. Make the dressing by whisking 1 teaspoon of freshly-squeezed lemon juice and 1/8 teaspoon of salt together in a small mixing bowl. Slowly add one tablespoon plus one teaspoon of extra-virgin olive oil and whisk until well-blended. Season the dressing with pepper to taste and spoon 1 tablespoon over the beets. Allow to marinate for 15 minutes before sprinkling with 1 tablespoon of crumbled feta cheese. Toss baby greens with the remainder of the dressing and place on the plate beside the beets just prior to serving.
