Foodnetwork offers some easy to follow recipes for many meals, including Parmesan chicken, which takes 1 hour in total to make, including preparation and cooking time. Parmesan chicken is normally served with a tomato sauce, reflecting its Italian origins.
A simple Parmesan chicken recipe is as follows:
- Making the sauce
- Making the chicken
- Bake the chicken and sauce
Four chicken cutlets should be used for the main part of the recipe, and Italian bread crumbs, mozzarella, 2 tablespoons of grated Parmesan, 3 tablespoons of flour and 2 large egg whites are also needed. The sauce needs 1 can of chopped tomatoes, 3 to 4 cloves of garlic, 1 onion and fresh basil.
Begin by frying the chopped onion in a little olive oil over a medium heat. Once the onion is golden, add the chopped garlic and cook for a further minute or so. Finally, add the tomatoes (a tablespoon of balsamic vinegar can also be added here) and bring to the boil, before reducing the heat and allowing to simmer for 10 minutes. Add the basil once the sauce has reduced.
Prepare a baking tray with oil, and heat the oven to 425 degrees F. Season the cutlets with some salt, then beat the egg whites. Combine the Parmesan and breadcrumbs together into a fine powder, then dip the chicken in the flour, followed by the eggs, before coating in the cheese and breadcrumb mixture. Once coated, fry the chicken in a hot pan for around 4 minutes or until golden on both sides.
Place the chicken in the baking tray, then pour over the sauce. Bake for around 15 minutes then serve.
