To make Perfect Pot Roast from Food Network, first season a 3- to 5-pound chuck roast with salt and pepper. Heat 2 to 3 tablespoons of olive oil in a large pot, then add two peeled and halved onions, cooking until brown on both sides. Remove the onions from the pot and repeat the same steps with six to eight unpeeled chopped carrots. Add the meat to the pot and cook until all sides are browned, then remove the meat.
Whisk in either 1 cup red wine or 1 cup beef broth to deglaze the pot, then add the meat and enough beef broth to cover it halfway. Place the onions and carrots back in the pot, along with two sprigs fresh rosemary and fresh thyme. Cover the pot and place in an oven at 275 degrees Fahrenheit. For a 3-pound roast, cook for about three hours, and for a 4- to 5-pound roast, cook for about four hours.
