A simple recipe for chicken parmigiana is available on Food.com. It requires chicken breasts, Italian seasoned breadcrumbs, Parmesan and mozzarella cheese, an egg and butter. Spaghetti sauce is also required.
To make four servings of chicken parmigiana, place four chicken breasts between two sheets of plastic wrap and flatten with a rolling pin. Combine the bread crumbs with 1/2 cup Parmesan cheese and 1 cup mozzarella cheese. Lightly beat 1 large egg to coat the chicken breasts, and then cover with the breadcrumb and cheese mixture.
Before cooking, melt butter in a large skillet on medium-high heat. Place the chicken into the skillet and cook both sides until lightly browned. Remove the chicken and place in a lightly greased baking dish. Pour 14 ounces of spaghetti sauce over the chicken and sprinkle with mozzarella cheese. Then cover and bake at 375 degrees for 30 minutes or until thoroughly cooked.
