To cook trout on a grill, choose a trout that is larger in size as bigger trout tend to hold together better. Clean the trout, and remove the head. Pack the inside with lemon slices, rosemary sprigs and garlic cloves, and coat the outside with olive oil, salt and pepper.
Use a fish or grilling basket to hold the fish while grilling. Oil the grill grate before heating. Place the trout on a hot grill, and use a large spatula to turn it. The spatula should touch the fish only twice; once to flip it and then again to lift it off the grill. Trout cooks quickly and is done when the meat is white and flaky.
Don’t overcook trout. Total grilling time for a whole trout is around 12 minutes.
