Use mackerel as a main ingredient in soups, casseroles, stir fry and mackerel cakes, served with sides or toppings. Always prepare the mackerel before using it in recipes by draining off the liquid and removing fins, large bones and skin. Some cooks leave the smaller bones as they are soft and safe to eat. Seafood soup and stew recipes are very compatible with mackerel, especially Southeast Asian recipes, such as curry.
To make a simple soup, sauté some onions and garlic, add a can of tomatoes, cover with water, and add some diced vegetables to taste. Add the prepared mackerel, and simmer. Add salt, pepper and other favorite seasonings. Serve the soup ladled over some crusty bread.
To make a casserole, replace the meat in a casserole recipe with mackerel, and serve as usual. Top a homemade pizza with some prepared mackerel flakes. Alternatively, stir fry some vegetables in oil, add soy sauce and some garlic, sesame oil and ginger. After removing the vegetables from the heat, stir in the prepared mackerel. Serve this dish over rice or noodles.
An easy mackerel cake recipe includes prepared mackerel, cracker crumbs, beaten eggs and salt. Mix the ingredients, and form into cakes. Sauté in butter to brown. Serve topped with shredded cheese or with a sauce made by mixing a can of cream of mushroom soup and 1/2 cup of milk or water.
