Peaches can be used in many recipes, from the popular peach cobbler dessert to the warm peach soups. A skillet peach cobbler can be made with ripe peaches, flour, butter, sugar, cinnamon and other small ingredients.
The Cooking Light website provides a selection of some favorite recipes involving fresh peaches. A fiery grilled peach and habanero salsa can be made with peaches, red onions, chopped fresh cilantro and habanero pepper.
A golden peach soup is made by combining 3 pounds of peaches, peeled, pitted and chopped; fresh lime juice; finely chopped red onion; cut radishes; minced red bell pepper; chopped fresh cilantro; minced jalapeño pepper; and sea salt. A shrimp and crab seviche can be added to the soup by combining 8 ounces of chopped cooked shrimp and 4 ounces of lump crabmeat with removed shell pieces. Fresh lime juice, finely chopped red onion, chopped fresh cilantro, minced jalapeño pepper, extra-virgin olive oil and salt are added to the seviche.
Grilled peaches can be enhanced by adding prosciutto, arugula and sprinkled with goat cheese. The recipe also uses honey, balsamic vinegar, olive oil and black pepper.
Halibut can be grilled with peach and pepper salsa. The recipe uses 4 skinless halibut fillets, fresh lemon juice, olive oil, paprika, a minced garlic clove and ground black pepper and salt. The salsa is made by combining 1 pound coarsely chopped yellow peaches, 1 cup chopped red bell pepper, thinly sliced green onions, chopped fresh arugula, fresh lemon juice, chopped fresh oregano, minced habanero pepper, minced garlic clove and salt.
