Cake Mix Lemon Bars
Lemon bars have a sweet, rich and slightly tangy flavor that is perfect for serving with afternoon tea. They consist of a cake base with a gooey, lemony topping. These bars are easy to make with a pre-packaged cake mix.

- 1 package yellow or lemon cake mix
- 1/2 cup softened butter
- 1 large egg
- 14 oz. sweetened condensed milk
- 1/2 cup lemon juice
Step 1: Coat the bottom of a 9-inch by 13-inch baking pan with butter, and coat it with a little flour. Pre-heat the oven to 350 degrees F.
Step 2: Pour the cake mix into a medium-sized bowl. Stir in the butter and one egg until mixed well. Pour the mix into the bottom of the greased pan. Spread out evenly with a spatula.
Step 3: Process the can of sweetened condensed milk with the lemon juice until well-blended. Top the cake batter in the pan with the condensed milk mixture. Place the pan in the oven for up to 25 minutes. Remove and allow the lemon bar to cool before slicing into bars.
