Find traditional Greek gyro recipes at cooking websites, such as FoodNetwork.com and AllRecipes.com. One traditional recipe at All Recipes uses ground beef and lamb. To make this gyro, blend one small onion in a food processor, and mix it with 1 pound of lamb and 1 pound of beef.
Mix in 1 tablespoon of minced garlic and 1 teaspoon each of dried oregano, cumin, marjoram, thyme, rosemary and fresh ground black pepper. Season the mixture with 1/4 teaspoon of sea salt. Chill the mixture for two hours, and then process it in a food processor.
Bake the mixture for 45 to 60 minutes in a 7-inch-by-4-inch loaf pan at 325 degrees Fahrenheit. When done, the internal temperature should be at least 165 degrees Fahrenheit. Drain away any excess grease.
Thinly slice the meat, and place the slices on pieces of pita bread. Top the meat with sliced tomatoes and red onions, shredded lettuce, crumbled feta cheese and prepared tzatziki sauce.
