Cakes that contains dairy products in the frosting or filling need to be refrigerated; otherwise, most cakes can be stored at room temperature. Cakes that are stored at room temperature or in the refrigerator will last about 3 days.
Frosted, uncut cake without dairy should be stored loosely covered under a large bowl or cake cover at room temperature or in the refrigerator.
To freeze the cake, place it in the freezer or refrigerator to harden the frosting, then wrap it well with plastic wrap to keep air out. Follow with a few layers of aluminum foil. A frosted cake will stay fresh in the freezer for up to 3 months, and an unfrosted cake will stay fresh for up to 6 months.
