The Cajun spice mix by Cheryl Smith of "Melting Pot" is one recipe for Cajun spice mix. The versatile recipe was shown on the episode "The Soul Kitchen -- BBQ Party."
To prepare the spice mix, combine 1/4 cup each of kosher salt, cayenne pepper, paprika, garlic granules and black pepper in a large mixing bowl. Add 2 tablespoons each of dried thyme, dried oregano and onion granules. Mix all ingredients thoroughly, and store the mixture in an airtight jar. Use the Cajun spice to make New Orleans-style dishes such as jambalaya and gumbo, or sprinkle it over shrimp. Try sprinkling it over popcorn for a zesty snack or mix it with non-fat Greek yogurt as a baked potato topping or veggie dip. Cajun spice also makes a good dry rub for steak, pork, fish, chicken and vegetables, including corn on the cob.
Create an easy party appetizer by mixing Cajun spice with crab meat and cream cheese, or sprinkle the spice over fresh oven-baked fries. Mix the spice with canola oil and brush it over salmon for grilling. For a spicy and healthy burger, mix Cajun spice, finely chopped red onion and Dijon mustard with ground turkey breast or lean ground beef.
