The classic cabbage soup recipe from the Cabbage Soup Diet involves sautéing chopped vegetables, adding seasonings, and simmering the vegetables in 12 cups of water. This recipe is the cornerstone of a cleansing weight-loss regimen that also includes fresh fruit, vegetables and a small quantity of lean beef.
To make cabbage soup for the Cabbage Soup Diet, chop 6 large onions, 2 green peppers, 1/2 head cabbage, 1 bunch celery and 3 carrots. Put a soup pot on the stove over medium heat, and add a generous amount of non-stick cooking spray. Add the onions, stir them for a few minutes, add the green peppers, and stir for one minute. Add the chopped cabbage, celery and carrots, and stir again.
Pour in 2 cans diced or whole tomatoes and 8 ounces of sliced mushrooms. Stir the vegetables and sprinkle them with curry powder and cayenne pepper. Add 12 cups of water and a package of dried onion soup mix. For a more flavorful broth, add several bouillon cubes.
Stir the soup, season it with salt and pepper to taste, and cook it over medium heat until the vegetables soften and the soup thickens slightly. Take the pot off of the heat, and correct the seasonings.
