To make Cabbage and Potato Bake, quarter and roast the cabbage and potatoes, and then fry the bacon with onions, salt and black pepper. Pour this mixture over the potatoes and cabbage, along with chicken stock, before covering the roasting pan with foil and placing it in the oven to bake for 1.5 hours. Serve the vegetables topped with the bacon mixture and broth.
Smashed Red Potatoes With Cabbage is based on a traditional Irish colcannon but with a lower carbohydrate content. First boil the potatoes and cabbage separately until tender and drain. Then fry the scallions in a skillet, adding the potatoes and smashing them with a spoon. Add hot milk is added, followed by the cabbage, salt, pepper and chives to serve.
Polish Cabbage, Potato and Bacon Casserole is also made with boiled potatoes, added to a Dutch oven with cooked bacon, cabbage, onions and garlic, as well as apple cider vinegar. Spoon the mixture into a casserole dish and bake under foil before serving.
