To prepare the simple breakfast strata, arrange 4 slices of bread at the bottom of a greased 8-inch square baking dish. Whisk 4 eggs with 1/2 cup of milk and 1/2 teaspoon of dried thyme or oregano, and drench the bread with this mixture. Chop 6 slices of Canadian-style bacon, and distribute the pieces on top. Cover the dish, and chill it in the refrigerator overnight. Uncover the dish, and bake it at 350 degrees Fahrenheit for 30 minutes. Scatter 1/2 cup of shredded cheddar cheese on top, and bake for another five minutes, or until it looks puffy and golden.
