How Is Braunschweiger Pate Made?

To make a typical Braunschweiger pate, combine braunschweiger liver sausage with cream cheese, minced onion and various seasonings, depending on the recipe. Mix all the ingredients together, and chill before serving.

For an easy version of the pate, place 1 pound of braunschweiger liver sausage in a medium bowl. Combine with 1 tablespoon of milk, 1 tablespoon of finely chopped onion and half of an 8-ounce package of softened cream cheese. Season the mixture with 1/2 teaspoon of sugar, 1/2 teaspoon of minced garlic, 1 teaspoon of chili powder and 1 tablespoon of Worcestershire sauce.

Wrap the well-blended mixture with plastic wrap, and refrigerate for at least two hours. Serve when firm. This recipe makes 24 servings and takes 30 minutes to prepare.

For a cheesier variation of the pate, place 8 ounces of braunschweiger liver sausage with a full 8-ounce package of softened cream cheese in a medium bowl. Mix in 1 tablespoon of minced onion, 2 teaspoons of lemon juice and 1 teaspoon of Worcestershire sauce. Season with salt and pepper to taste.

Form the mixture into a ball, wrap in plastic wrap, and chill for at least one hour. This recipe makes 16 servings and takes only 15 minutes to prepare.
