If a crispy and slightly crunchy red cabbage is desired, it should be boiled for 5 minutes. Water should be brought to a boil before adding the cabbage.
If a softer cabbage is preferred, the cabbage should be boiled longer. It can also be slow cooked in the crockpot for 1 to 2 hours.
Red cabbage can turn blue when it is being boiled. To avoid this color change, add a few dashes of vinegar to the boiling water before cooking.
Red cabbage can also be pickled, braised or served raw. Red cabbage is also referred to as purple cabbage, and it is in season from September through December.
