Some Bob’s Red Mill recipes include Amaranth Tortillas and Berry Protein Smoothie. The tortillas offer a gluten-free, dairy-free option for Mexican food or wraps. The berry protein smoothie uses Bob’s Hemp Protein Powder to provide extra nutrients.
Prepare the tortillas by placing 1 1/2 cups of amaranth flour in a bowl along with 1 teaspoon of premixed Mexican seasoning. Mix these ingredients together before adding 1/2 cup of water. Mix to form a dough, adding more flour or water as necessary for the dough to form a ball that holds its shape. Divide the dough into six equal balls. Roll each ball in more amaranth flour, kneading and patting them into 5- to 6-inch circles approximately 1/8 inch thick. Cook the tortillas in a frying pan or griddle, without oil, until they are lightly browned on each side. Once cool, store the tortillas in the refrigerator or freeze them.
For the berry protein smoothie, place 2 cups of berries or other fresh fruit in a blender. Add 1 1/2 cups of dairy, soy or rice milk, 1/4 cup of hemp powder and a banana. Blend on medium high until the contents are smooth. Divide the smoothie into two servings.
