One good black bean soup recipe is the Contest-Winning Black Bean Soup from Taste of Home. The recipe is vegetarian, although meat such as chicken or beef can be easily added.
This recipe is started by mashing one can of black beans and setting them aside. Three celery ribs, one large onion, one medium red pepper and one jalapeño are chopped and sautéed in olive oil until tender using a large sauce pan. Four minced garlic cloves are then added and the mixture cooked for an additional minute to allow the garlic to become slightly tender. Then two cans of chicken or vegetable broth and one can of diced tomatoes with green chilis are added, along with some cumin, coriander, Louisiana-style hot sauce and a bay leaf.
After this, the mashed black beans plus two additional cans of black beans are added. At this point, the soup is brought to a boil, then reduced and allowed to simmer with a lid on for 15 minutes. Once the ingredients are sufficiently broken down, the bay leaf is discarded and one teaspoon of lime juice is stirred in. The soup is then served using chopped green onions and a spoonful of sour cream as garnishments.
