To make beer mussels, add 4 tablespoons of butter to a large stockpot with a tight fitting lid. Melt the butter over medium heat and add four thinly sliced cloves of garlic and one thinly sliced shallot to the pot. Cook the garlic and shallots for one minute or until they begin to sizzle. Add one 12-ounce bottle of lager beer, 1/4 cup chopped fresh Italian parsley, 1 teaspoon of lemon zest and a pinch of cayenne pepper to the pot. Turn the heat to high and bring all of the ingredients to a boil. Add 3 pounds of fresh mussels that are scrubbed and rinsed clean then quickly place the lid on the pot. Cook the mussels for 3 minutes then gently shake the pot back and forth. Cook the mussels for another 2 to 4 minutes or until they open. Serve immediately.
