Some beef brisket oven recipes include Texas oven-roasted beef brisket and oven-braised corned beef brisket. Before starting on the brisket, trim off any fat that exceeds 1/8 inch.
To make a Texas oven-roasted beef brisket, start out with a spicy dry rub. Combine 2 tablespoons of chili powder, 1 tablespoon of garlic powder, 1 tablespoon of onion powder, 2 tablespoons of salt and 1 tablespoon of ground black pepper in a bowl. Add 1 tablespoon of sugar, 1 crushed bay leaf and 2 teaspoons of dry mustard. Mix everything together, and rub the mixture on all sides of the brisket.
Place the brisket in a roasting pan, and cook at 350 degrees Fahrenheit for one hour. Pour 1 1/2 cups of beef stock into the roasting pan, and cook for three more hours at 300 degrees Fahrenheit.
Purchase corned beef brisket for the oven-braised recipe. Rinse, and rub the brisket to spread the corning salt. Place the brisket in a roasting pan with the fattiest side facing up. Cover the top of the roast with slices from 1 lemon and 1 onion, 1 teaspoon of black peppercorns, 6 to 8 whole cloves and 1/2 teaspoon of whole allspice. Add 8 cups of boiling water to the pan. Cover the roast with foil, and cook at 325 degrees Fahrenheit for four hours.
As the brisket cooks, make a glaze from 1/4 cups of brown sugar and 1/4 cup Dijon mustard. Spread the mixture on the roast, and broil for another 5 minutes until the glaze starts to brown. After the beef brisket is finished cooking, slice the meat across the grain before serving.
