The bay leaf is added to various stews and soups, but it is hard to digest. Bay leaves are generally not consumed, but the leaf adds flavor and health benefits to a variety of meals.

Bay leaves contain such nutrients as potassium, iron and calcium. They also possess healing properties, including reducing inflammation, reducing heart disease and aiding in healthy digestion. Bay leaf soup also contains various compounds such as parthenolides, which alleviate migraines and regulate blood sugar for diabetics.

Bay leaves add a meaty flavor to soups as well. They are used in both vegetarian soups and meat-based soups.
