To make basic sourdough bread, prepare the starter by mixing 3 cups warm water, 1 1/2 tablespoons active dry yeast and 1 teaspoon sugar. Let the mixture sit for five minutes until foamy, then add 3 cups all-purpose flour and mix. Cover with a towel and allow to sit for eight to 12 hours. Combine the starter with 2 cups bread flour and 3/4 teaspoon salt. Using the dough hook on a mixer, knead the dough until it no longer sticks to the mixing bowl. Shape the dough into a ball and allow to rise until it doubles in size. Cut a cross-hatch pattern in the dough and cook at 400 degrees Fahrenheit for 60 minutes or until crust is browned.
