A basic recipe for creamed onions includes frozen pearl onions, unsalted butter, heavy cream, and salt and pepper. Food Network and Martha Stewart provide two such recipes.
The Food Network recipe calls for 1 bag of frozen pearl onions, 1 tablespoon of unsalted butter, 1/2 cup of heavy cream, and salt and black pepper. Thaw the onions, and then sauté them in the butter until they are golden brown. Deglaze the onions, and then add the heavy cream, salt and pepper. Cook on low heat for a few minutes.
The Martha Stewart recipe requires bringing 8 cups of water to a boil in a large saucepan. Add 2 tablespoons of salt, add 2 bags of frozen pearl onions, and cook for 12 minutes. Drain the onions and allow them to cool. Cut the roots of the onions and pop the onions out of their skins. Dry them on a paper towel.
Melt the butter in a small saucepan over medium heat. Add the flour and whisk it until the mixture bubbles. Whisk in 2 cups of whole milk. Bring the mixture to a boil, whisking it frequently. Add 3/4 tablespoon of salt, 1/4 teaspoon of nutmeg and 4 sprigs of fresh sage.
Reduce the heat. Stir the onions into the mixture and cook until the onions are heated. Remove the sage sprigs.
