In a large stockpot, add 2 cups crumbed bacon, 3 cups cubed potatoes, 14 1/2 ounces of chicken stock, 1 grated carrot, and 1/2 cup chopped onion over medium heat. Add 1 tablespoon dried parsley, 1/2 teaspoon celery seed, 1/2 teaspoon pepper and 1/2 teaspoon salt to the pot. Cover the soup, and simmer for 15 minutes, or until the potatoes are tender.
In a small bowl, whisk together 3 tablespoons flour and 3 cups milk. Add the mixture to the soup, and bring it to a boil. Cook for 2 minutes and keep stirring to avoid burning the soup. Stir in 8 ounces shredded or processed cheese to the soup. Continue cooking the soup until the cheese is melted. Serve the soup hot, and garnish with green onions, if desired.
Customize this potato soup by adding walnut basil pesto, kale and chicken sausage, corn or sour cream to the recipe. The recipe works well as a base for chowders or stews that can be seasoned as desired.
